Tex-Mex Meatballs

500g 2% turkey mince £3.30

1 small onion (peeled and chopped) £0.17

1 egg £0.11p

1 peppers (chopped) £0.43

1 x 400g kidney beans (rinsed and crushed) £0.30

4 garlic cloves (minced or use lazy garlic) £0.10

1 x 400g tin chopped tomatoes £0.28

1 chicken stock £0.40

Garlic granules, onion granules, grounds coriander, paprika, chilli powder £0.20

Salt and pepper to taste

Total cost £5.29 per portion £1.32 (4 portions)


To make the meat balls, first drain and crush the kidney beans and place in a bowl with the turkey mince add the garlic granules, onion granules, ground coriander, paprika, chilli powder and season. Mix all this together and take a small meatball out and cook this to taste and add if more season is needed. Ball the meat balls up and place them on a oven tray and cook for around 20 minutes in the oven on gas mark 7 or 200 in a fan assisted oven.

When they are cooking, lets start on the sauce.

For the sauce place the chopped onion and frozen peppers in a solid bottom pan with the low calorie spray, cook until onions go transparent then add the chopped tomatoes, stock cube, chilli powder, paprika, garlic granules and season to taste. Cook this on a low heat for around 10 minutes

Drain the meat balls off if any fat and then add to the sauce, mix well and serve with microwave rice or vegetables.

The meat balls could be made the day before or in the morning so when you get back from work its all ready for you.

You can portion the meat balls in containers and freeze for another day.
