Lentil and Bacon Soup
150g bacon slices (chopped ) £0.75p
1 small onion (peeled and chopped) £0.17p
2 medium carrots (peeled and diced) £0.11p
150g red lentils £0.33p
150g potatoes (peeled and diced) £0.15p
1 bay leaf £0.02
1.4l chicken/vegetable stock £0.40p
Salt and pepper to taste
Total cost £1.93 per portion £0.48p
Soak the red lentils for around 20 minutes, then prepare all the vegetables as described, place 1 vegetable and 1 chicken stock with 1.4l hot water.
Place the bacon, potatoes and carrots in a hot solid bottom pan with low calorie spray, cook for around 5 minutes and then add the onions. Then rinse the lentils into a colander and place the lentils in the pan with the bay leaf and stock, bring this up to the boil and then simmer until the lentils are just soft.
Season to taste and place in 4 container equally.
This is ideal for lunch times and is high in fibre and protein.
